Om man d\u00e5 bet\u00e4nker att man idag behandlar merparten av alla vinstockar med stora m\u00e4ngder kemikalier borde man kanske vara lite mer noggrann i sitt val av vin Av Monica Ramfelt<br \/>\nFoto Harry Ramfelt<br \/>\ne-post: ramfelt@telia.com<\/p>\n<p>Kemikalier anv\u00e4nds, dels f\u00f6r att vinklasarna uts\u00e4tts f\u00f6r extremt m\u00e5nga sjukdomsangrepp, dels f\u00f6r att man vill utvinna s\u00e5 mycket druvor som m\u00f6jligt per planta.<br \/>\nEn vinstock kan ge upp till 6 kg druvor om man tills\u00e4tter extra n\u00e4ring och bek\u00e4mpningsmedel. Plantan beh\u00f6ver ca 16 olika n\u00e4rings\u00e4mnen, men av kostnadssk\u00e4l tills\u00e4tts ofta bara de mest n\u00f6dv\u00e4ndiga, s\u00e5som kv\u00e4ve, fosfor och kalium.<br \/>\nDetta medf\u00f6r att vinrankans motst\u00e5ndskraft mot sjukdomsangrepp f\u00f6rs\u00e4mras, varf\u00f6r man tvingas bespruta druvorna med ytterligare kemikalier. S\u00e5 \u00e4r den onda cirkeln ig\u00e5ng.<\/p>\n<p>Det finns alternativ<br \/>\nVad \u00e4r d\u00e5 l\u00f6sningen p\u00e5 problemet? Dricka mindre naturligtvis. Men det \u00e4r ju synd p\u00e5 de goda dropparna och vi vill ju inte g\u00e4rna avst\u00e5 fr\u00e5n livets goda. En b\u00e4ttre l\u00f6sning \u00e4r kanske att v\u00e4lja ett ekologiskt vin.<br \/>\nNu \u00e4r det inte s\u00e5 l\u00e4tt att hitta ekologiskt vin h\u00e4r nere p\u00e5 kusten, men sedan n\u00e5gra \u00e5r finns det, h\u00f6gt bland bergen norr om Ronda, n\u00e5gra vinb\u00f6nder som odlar ekologiskt.<br \/>\nDen f\u00f6rste var Friedrich Schatz, som fann att omr\u00e5det passade utm\u00e4rkt f\u00f6r vinodling. \u00c5r 1982 k\u00f6pte han en g\u00e5rd h\u00e4r, Finca Sanguijuela, p\u00e5 v\u00e4gen mot Acinipo. Acinipo var en romersk stad, som stod s\u00e5 h\u00f6gt i rang att den fick pr\u00e4gla sina egna mynt.<br \/>\nMynten har en druvklase p\u00e5 baksidan och man vet att romarna hade en s\u00e4ker k\u00e4nsla f\u00f6r var man skulle odla vin. S\u00e5 var ocks\u00e5 fallet h\u00e4r. Friedrich har d\u00e4rf\u00f6r kallat sitt vin f\u00f6r Acinipo och myntet finns avbildat p\u00e5 flaskorna.<\/p>\n<p>Rigor\u00f6s kontroll<br \/>\nDen ekologiska framst\u00e4llningen av vinet kontrolleras av Comit\u00e9 Andaluz de Agricultura Ecol\u00f3gica, vilket borgar f\u00f6r att vinet h\u00e5ller vad det lovar. Jag har pr\u00f6vat n\u00e5gra av hans viner och m\u00e5ste s\u00e4ga att de smakar mycket gott. Men billiga \u00e4r de inte, eftersom man m\u00e5ste r\u00e4kna med ett betydande merarbete.<br \/>\nF\u00f6r det f\u00f6rsta m\u00e5ste Friedrich binda upp rankorna p\u00e5 en h\u00f6gre h\u00f6jd f\u00f6r att inte druvorna ska v\u00e4xa s\u00e5 n\u00e4ra marken, d\u00e4r svampsporer l\u00e4tt studsar upp i druvklasarna vid regn eller bearbetning av jorden.<br \/>\nF\u00f6r det andra m\u00e5ste han sk\u00e4ra bort flera skott p\u00e5 vinrankorna f\u00f6r att f\u00e5 en starkare och luftigare planta som inte kr\u00e4ver s\u00e5 mycket n\u00e4ring. Men detta inneb\u00e4r ocks\u00e5 att han bara f\u00e5r 1-1,5 kg druvor per planta mot normalt 6 kg.<br \/>\nDessutom tills\u00e4tter han naturliga g\u00f6dnings\u00e4mnen, som inneh\u00e5ller de flesta av de 16 n\u00f6dv\u00e4ndiga n\u00e4ringsmedlen. Mellan raderna av vinstockar odlar han \u00e4rtv\u00e4xter som senare pl\u00f6js ner.<br \/>\nDessa v\u00e4xter ger framf\u00f6r allt mycket kv\u00e4ve, vilket plantan beh\u00f6ver samtidigt som jorden skyddas fr\u00e5n erosion och urlakning vid h\u00e4ftiga regn. Alla rester fr\u00e5n vinframst\u00e4llningen s\u00e5som k\u00e4rnor och skal \u00e5terb\u00f6rdas dessutom till jorden.<\/p>\n<p>Sekell\u00e5ng erfarenhet<br \/>\nFriedrich Schatz har redan f\u00e5tt m\u00e5nga utm\u00e4rkelser och diplom f\u00f6r sina fina viner, vilket kan verka f\u00f6rv\u00e5nansv\u00e4rt eftersom de inte funnits s\u00e5 l\u00e4nge p\u00e5 marknaden. Men det h\u00e4nger kanske samman med att hans familj har n\u00e4stan 400 \u00e5rs erfarenhet av vinodling i Tyskland.<br \/>\nJag har smakat m\u00e5nga ekologiska viner i Sverige men inget st\u00e5r sig i konkurrensen med Friedrichs Acinipo. F\u00f6r framtiden kan man bara hoppas p\u00e5 att det blir m\u00f6jligt att producera ekologiska viner till mycket l\u00e4gre kostnader \u2013 hur det nu skulle kunna l\u00e5ta sig g\u00f6ras.<\/p>\n<p>N\u00e5gra f\u00f6rdelar med ekologiskt vin<br \/>\n\u2022 Inga skadliga kemikalier<br \/>\n\u2022 Vinet skapar en alkalisk milj\u00f6 i magen, till skillnad mot m\u00e5nga viner som bildar en sur milj\u00f6, vilket bidrar till baksm\u00e4lla, sura uppst\u00f6tningar etc.<br \/>\n\u2022 Inneh\u00e5ller fler antioxidanter<br \/>\n\u2022 Inneh\u00e5ller fler photon\u00e4mnen som hj\u00e4lper v\u00e5ra celler att kommunicera med varandra. <\/p>\n","protected":false},"excerpt":{"rendered":"<p>Visste du att vindruvor, mer \u00e4n de flesta andra frukter, absorberar f\u00f6roreningar och att den skadliga effekten av dessa f\u00f6roreningar kraftigt f\u00f6rst\u00e4rks av alkohol.
