Jag har tr\u00e4ffat m\u00e5nga som fnyser \u00e5t det spanska k\u00f6ket. Det \u00e4r ju bara sangria, skinka och tortilla har jag ofta f\u00e5tt h\u00f6ra, men ack vad de bedrar sig Av G\u00f6ran Ufer<\/p>\n<p>Vi ska fara runt lite i landet och se oss omkring vad det erbjuds fr\u00e5n Asturien, d\u00e4r har vi Queso Azul de hoja, en gr\u00f6nm\u00f6gelost som t\u00e4cks med l\u00f6nnl\u00f6v och sedan f\u00e5r mogna i naturgrottor i cirka tre m\u00e5nader.<br \/>\nRegionen Castilla y Leon representeras av Cecina, ett r\u00f6kt och lufttorkat oxinnanl\u00e5r med samma l\u00e5nga mognadsprocess som Pata Nergra skinkan. F\u00f6rst l\u00e4ggs k\u00f6ttet i grovsalt lika m\u00e5nga dagar som k\u00f6ttet v\u00e4ger, d\u00e4refter r\u00f6kning med ek, och till slut lufttorkning i minst 24 m\u00e5nader.<br \/>\nDetta \u00e4r ett k\u00f6tt som har traditioner \u00e4nda tillbaks till tiden f\u00f6re \u00e5r O. Bland annat Columbus, n\u00e4r han var ute p\u00e5 sin v\u00e4rldsturn\u00e9 med skeppet Santa Maria, hade Cecina i sin proviant.<\/p>\n<p>Dagens drycker kommer ocks\u00e5 fr\u00e5n olika delar av Spanien. N\u00e5gra av ingredienserna som finns med idag har ni s\u00e4kert sett p\u00e5 marknader och i butiker och undrat b\u00e5de en och tv\u00e5 g\u00e5nger vad det skall anv\u00e4ndas som exempelvis mangold som kan anv\u00e4ndas b\u00e5de varm och kall.<br \/>\nFr\u00e4s fint strimlad mangold i olivolja och vitl\u00f6k, servera med rostade pinjen\u00f6tter och flingsalt, underbart gott och enkelt.<\/p>\n<p>Som avslutning n\u00e5gra visdomsord som ni kan ha med er n\u00e4r det puttrar i grytorna och fr\u00e4ser i stekpannorna: \u201dN\u00e4r k\u00e4rlek \u00e4r kryddan, tycker alla om maten\u201d.<\/p>\n<p>Entrada de Cecina y Queso de hoja. 4 pers<br \/>\n4 br\u00f6dkivor<br \/>\n4 skivor Cecina (spanskt lufttorkat oxinnanl\u00e5r)<br \/>\nPequillo, spansk inlagd paprika<br \/>\n100 gr queso de hoja (gr\u00f6nm\u00f6gelost fr\u00e5n Asturien)<br \/>\n1 aubergin<br \/>\n1 vitl\u00f6ksklyfta<br \/>\nolivolja, salt och peppar<br \/>\nMangold, fint strimlad<br \/>\nBasilika<br \/>\nOliver och kapris<br \/>\n3 msk vinagretti<\/p>\n<p>Sk\u00e4r auberginerna i 1 cm tjocka skivor, grilla i olivolja i en grillpanna, salta och peppra, varva cecina, aubergine ost och paprika p\u00e5 br\u00f6det och toppa med mangold och basilika sv\u00e4ngd i lite vinagretti. L\u00e4gg dem p\u00e5 en tallrik och bryn d\u00e4refter den finhackade l\u00f6ken och skinkan, vitl\u00f6k och mor\u00f6tterna n\u00e5gon minut.<br \/>\nTills\u00e4tt vinet, vattnet, lagerblad och timjan samt l\u00e5t det koka upp och l\u00e4gg sedan i rapph\u00f6nspaketen, l\u00e5ren och l\u00e5t det sedan sjuda p\u00e5 svag v\u00e4rme i 30 min.<br \/>\nUnder tiden skiva champinjoner, cebolleta, k\u00e5lrot i munsbitar.<br \/>\nTa ut de runda b\u00f6norna ur \u00e4rtbaljorna och bryn alltsammans i olivolja, n\u00e5gra drag med pepparkvarnen och lite flingsalt.<br \/>\nL\u00e4gg upp snyggt p\u00e5 tallrik och servera en h\u00e4rligt spansk r\u00f6d tempranillo (Tinto Fino) fr\u00e5n D.O  Ribera del Duero.<\/p>\n<p>Postre: Coca con almendras (mandelkaka med Reineta \u00e4pplen)<br \/>\n1\/2 liter mj\u00f6lk<br \/>\n1\/4 liter olja<br \/>\n4 \u00e4gg<br \/>\n1\/2 kg socker<br \/>\n250 gr hackad mandel<br \/>\n500 gr mj\u00f6l<br \/>\n1 pressad citron<br \/>\n2 tsk bakpulver<br \/>\n1 tsk kanel<br \/>\nRiven cocos<br \/>\n4 \u00e4pplen Manzana Reineta<\/p>\n<p>Vispa vitorna till h\u00e5rt skum, r\u00f6r i de uppvispade gulorna, tills\u00e4tt \u00f6vriga ingredienser och r\u00f6r f\u00f6rsiktigt till en sl\u00e4t smet.
