Min f\u00f6ljeslagerska och Ayudante genom livet, Anne Marie och sonen Joachim som f\u00f6rresten f\u00f6ljer i v\u00e5ra fotsp\u00e5r genom att utbilda sig till kock i Benahavis kommer att vara mina kritiska granskare en tid fram\u00f6ver. Mat har alltid varit en stor del av mitt liv. Redan som liten lades grunden till det stora intresset f\u00f6r mat. N\u00e4r jag var \u00e5tta m\u00e5nader serverade mamma rotmos, sedan fortsatte det med fredagsmyset: helstekt fl\u00e4skfil\u00e9 och hasselbackspotatis, s\u00f6ndagsstek med hemlagad svartavinb\u00e4rsgel\u00e9 och varf\u00f6r inte n\u00e4mna farmors kylsk\u00e5p och skafferi med hemkokt tunga och sju sorters kakor   &#038; bullar. Det \u00e4r v\u00e4l inte konstigt att man blivit det som man blivit.<\/p>\n<p>I min lilla spalt kommer ni att lotsas fram i det spanska k\u00f6ket, b\u00e5de traditionellt och med ett lite modernare t\u00e4nkande samtidigt som ni f\u00e5r bekanta er med de fantastiska r\u00e5varor som finns i Spanien. Hoppas att det ska inspirera er till att v\u00e5ga g\u00f6ra det d\u00e4r lilla extra n\u00e4r ni st\u00e5r i k\u00f6ket och ska laga mat till b\u00e5de vardag och fest.<\/p>\n<p>H\u00e4r kommer en trer\u00e4ttersmeny d\u00e4r ingredienserna i st\u00f6rsta m\u00f6jliga m\u00e5n f\u00f6ljer s\u00e4songen. Och s\u00e5 tipsar jag om vad det ska drickas till.<\/p>\n<p>F\u00f6rr\u00e4tt till fyra personer<br \/>\nCogollos 2 st ( sallad)<br \/>\nEndivias 2 st  (endiv)<br \/>\nPomelo   2 st  (typ blodgrape)<br \/>\nBerros  (Vattenkrasse) efter smak , kan vara lite stark i smaken<br \/>\nVinagre de Jerez<br \/>\nolivoja<br \/>\nGrovsalt<br \/>\nGrovmalen svartpeppar<br \/>\nRussin<br \/>\nRostade Pinjen\u00f6tter el. rostade sojab\u00f6nor<\/p>\n<p>Sk\u00f6lj salladsbladen och torka av dem. Sk\u00e4r bort skalet p\u00e5 pomelon och sk\u00e4r i tunna skivor.<br \/>\nL\u00e4gg upp snyggt p\u00e5 tallrik och str\u00f6 lite pinjen\u00f6tter och russin \u00f6ver.<br \/>\nH\u00e4ll f\u00f6rsiktigt lite vin\u00e4ger och olja \u00f6ver alltihopa samt avsluta med flingsalt och n\u00e5gra drag med pepparkvarnen.<br \/>\nVill man s\u00e5 kan man servera lite manchegoost och serranoskinka till salladen.<br \/>\nH\u00e4r smakar en amontillado bra med sin torra smak och doft av n\u00f6tter.<\/p>\n<p>Varmr\u00e4tt till fyra personer<br \/>\nDorada 2 st<br \/>\nHinojo (f\u00e4nkol) 1 st<br \/>\nAjetes tiernos (ser ut som v\u00e5rl\u00f6k smakar vitl\u00f6k) 8 st<br \/>\nChirivia ( palsternacka) 2 st<br \/>\nGul  l\u00f6k , finhackad  1 st<br \/>\nBatata (s\u00f6tpotatis) 6 st<br \/>\nsm\u00f6r 50 gr<br \/>\nTorrt vitt vin 2 dl<br \/>\nvatten 6 dl<br \/>\nsalt , peppar samt olja<\/p>\n<p>Be att f\u00e5 fisken fil\u00e9ad och skinnet borttaget.<br \/>\nFiskskrovet ska ni ta med hem f\u00f6r det ska bli en fin buljong.<br \/>\nI mitten p\u00e5 fil\u00e9erna finns n\u00e5gra ben, ta en t\u00e5ng och dra bort dem.<br \/>\nH\u00e4ll vatten och vin i en kastrull och koka upp.<br \/>\nL\u00e4gg i fiskskrovet och l\u00e5t sm\u00e5puttra 5 min, ta bort eventuellt skum som kan komma p\u00e5 ytan.<br \/>\nL\u00e4gg i lite av f\u00e4nkolen, palsternackan, ett litet lagerblad samt 5 vitpepparkorn samt den hela finhackade l\u00f6ken, l\u00e5t det sen sm\u00e5puttra i 30 min.<br \/>\nSkala och sk\u00e4r batatan i bitar och koka den i l\u00e4ttsaltat vatten, den blir klar ganska s\u00e5 fort.<br \/>\nH\u00e4ll ca 2 dl av potatisvattnet i fiskbuljongen, resten av potatisvattnet sl\u00e5r man bort.<br \/>\nVispa med elvisp och g\u00f6r ett fluffigt mos, eventuellt salta och peppra.<br \/>\nSila av fiskbuljongen.<br \/>\nSkiva f\u00e4nk\u00e5len och l\u00e4gg i en kastrull placera fisken uppe p\u00e5 samt den varma buljongen \u00f6ver, t\u00e4ck med ett lock och l\u00e5t st\u00e5 i 10-15 min.<br \/>\nSkiva palsternackan och stek den tillsammans med ajetes tiernos .<br \/>\nTa upp fil\u00e9erna, l\u00e5t f\u00e4nk\u00e5len vara kvar och tills\u00e4tt sm\u00f6r och k\u00f6r sedan i mixer till en sl\u00e4t s\u00e5s, salta och peppra.<br \/>\nServera p\u00e5 varma tallrikar och njut samtidigt av ett gott ungt torrt fruktigt vitt vin fr\u00e5n Huelva med doft av \u00e4pple.<br \/>\nVinet heter MIORO en Cosecha 2007 , finns att k\u00f6pa hos Vi\u00f1a Sur i San Pedro, tel 952 785 193, C\/Velez-Malaga, Loc 6.<\/p>\n<p>Dessert till fyra personer<br \/>\nChirimoyas  3 st<br \/>\nVispgr\u00e4dde 4 dl<br \/>\nSocker, efter tycke och smak beror lite p\u00e5 chirimoyan<br \/>\nBanan<br \/>\nAnanas<br \/>\nMynta<br \/>\nVispa gr\u00e4dden med lite socker och st\u00e4ll i kylen.<br \/>\nChirimoyan har ett mjukt fruktk\u00f6tt med massor av ganska stora svarta k\u00e4rnor.<br \/>\nFruktk\u00f6ttet \u00e4r smakrikt, h\u00e4r hittar man jordgubbe, ananas och banan.<br \/>\nTa bort k\u00e4rnorna som \u00e4r lite pyssligt och hacka sedan fruktk\u00f6ttet som man l\u00e4gger i en sil s\u00e5 det f\u00e5r rinna av.<br \/>\nUnder tiden s\u00e5 g\u00f6r man fruktspetten<br \/>\nBlanda sedan frukthacket med gr\u00e4dde och l\u00e4gg upp i snygga glas, garnera med spettet och myntan.<br \/>\nH\u00e4r kan man dricka en sherry, ex. Gonzalez byass nectar gjord p\u00e5 Pedro Ximenezdruvan, s\u00f6tt och sammetslent med smak av russin.<br \/>\nDesserten i sig \u00e4r inte s\u00f6t s\u00e5 d\u00e5 passar den h\u00e4r sherryn mycket bra.<br \/>\nSom man s\u00e4ger h\u00e4r i Andalucien \u201dAPROVECHE\u201d ( smaklig m\u00e5ltid).<br \/>\nI och med det s\u00e5 \u00e4r det slut fr\u00f6 denna g\u00e5ng.
