Av Cruz Liljegren<\/p>\n<p>Den f\u00f6rsta Cavan producerades 1872 i den katalanska byn Sant Sadurn\u00ed d\u2019Anoia och inspirationen kom inte helt ov\u00e4ntat fr\u00e5n Champagne i Frankrike. I Spanien kallar m\u00e5nga \u00e4ldre fortfarande Cavan f\u00f6r champ\u00e1n \u00e4ven fast Cava \u00e4r det officiella namnet sedan 1959. Idag exporteras det bubblande vinet runt hela jordklotet och produktionen \u00e4r uppe i 220 miljoner flaskor per \u00e5r, ungef\u00e4r 100 miljoner f\u00e4rre \u00e4n vinet champagne. Produktionen domineras idag av vinhusen Freixenet och Codorn\u00edu som tillsammans st\u00e5r f\u00f6r 75 procent av all Cava, allra st\u00f6rst \u00e4r Freixenet med en marknadsandel p\u00e5 56 procent(!) Majoriteten av de 271 registrerade producenterna \u00e4r dock sm\u00e5 familje\u00e4gda egendomar.<\/p>\n<p>Var tillverkas Cava?<br \/>\n\u00d6ver 95 procent av all Cava kommer fr\u00e5n Katalonien i nord\u00f6stra Spanien, men det \u00e4r \u00e4ven till\u00e5tet med Cava fr\u00e5n bland annat Rioja, Navarra och Valencia. Anledningen till att Cava inte \u00e4r lika geografiskt bundet som champagne \u00e4r att de stora producenterna vill f\u00f6rs\u00e4kra sig om att kunna k\u00f6pa druvor till ett l\u00e5gt pris. Om Cava bara fick produceras i de mest traditionella omr\u00e5det (runt byn Sant Sadurn\u00ed d\u2019Anoia i Katalonien) skulle druvpriserna stiga. Druvpriset \u00e4r viktigt f\u00f6r de allra flesta producenter k\u00f6per duvor eller basviner, f\u00e5 \u00e4r de som sk\u00f6ter hela produktionen fr\u00e5n r\u00e5vara till slutprodukt.<\/p>\n<p>Och hur tillverkas Cava?<br \/>\nEn viktig sak att k\u00e4nna till \u00e4r att Cava g\u00f6rs med vad som i sammanhanget mousserande viner kallas f\u00f6r den `traditionella metoden.\u00b4 Det inneb\u00e4r att den bubbelgivande j\u00e4sningen sker i flaskan och inte i st\u00e5ltankar \u2013 vanligt i bland annat Italien (Prosecco) och Tyskland (Sekt). Cava \u00e4r allts\u00e5 producerad med samma teknik som man anv\u00e4nder i sj\u00e4lvaste Champagne.<\/p>\n<p>Vilka druvor anv\u00e4nds till Cava?<br \/>\nDe traditionella druvorna parrellada, macabeo och xarel-lo har sedan 1990-taket f\u00e5tt s\u00e4llskap av de internationella druvorna chardonnay och pinot noir. Ofta g\u00f6rs cavan p\u00e5 de tre f\u00f6rsta, som var och en pr\u00e4glar vinet p\u00e5 sitt alldeles egna vis. M\u00e5nga professionella vinprovare s\u00e4ger att Cava har en liten bitterhet i eftersmaken, det st\u00e4mmer, det \u00e4r druvan xarel-lo som ger denna karakt\u00e4r. Med de bl\u00e5 druvorna monastrell, grenache, pinot noir eller trepat \u00e4r det numera m\u00f6jligt att tillverka ros\u00e9 Cava.<\/p>\n<p>Cava &#8211; de olika stilarna<br \/>\nOlika stilar av Cava kan skapas genom att v\u00e4lja ut druvsorter, lagringstid och sockerhalt. Ett tips \u00e4r att s\u00f6ka upp de torrare stilarna, halvtorr Cava g\u00f6rs i regel med bittrare och s\u00e4mre basviner. Sockret sminkar lyckligtvis \u00f6ver de vassaste kanterna.<br \/>\n  L\u00e4r dig snacket!<br \/>\nDen bubbelgivande (kolsyregivande) j\u00e4sningen: Startar med en tillsats av `licor de tiraje\u00b4 en sockerl\u00f6sning som inneh\u00e5ller j\u00e4st f\u00f6r j\u00e4sningen och lite bentonit, som ser till att vinet blir kristallklart.<\/p>\n<p>Licor de expedici\u00f3n: Detta \u00e4r s\u00f6tat basvin som \u00e4ven kan ha tillsats av fatlagrade viner eller druvspriter. Lik\u00f6ren tills\u00e4tts efter degogering f\u00f6r att reglera balansen mellan syra och s\u00f6tma i vinet. F\u00e5 konsumenter k\u00e4nner till att producentens recept p\u00e5 `licor de expedici\u00f3n\u00b4 \u00e4r en viktig del i dennes husstil och d\u00e4rf\u00f6r hemlig \u00e4ven f\u00f6r snokande journalister.<\/p>\n<p>Det viktiga basvinet<br \/>\nCavan blir inte mycket b\u00e4ttre \u00e4n det stilla vita vinet den \u00e4r gjord av. Precis som i Champagne s\u00e4gs det ofta att det vita basvinet ska vara rent, l\u00e4tt, syrligt och neutralt; men vi som provar mycket vin vet att de b\u00e4sta Cavorna g\u00f6rs p\u00e5 basviner med karakt\u00e4r. Ett bra exempel \u00e4r vinerna fr\u00e5n Celler Mas Candi, vars gamla stockar av druvan xarel-lo ger den personliga touch till Cavan som de stora husen ibland saknar.<\/p>\n<p>Lagringstid: Efter en tillsats av `licor de tiraje\u00b4 l\u00e4ggs flaskorna i horisontal position i stora underjordiska valv. Vinerna m\u00e5ste \u201dligga p\u00e5 j\u00e4sten\u201d i minst 9 m\u00e5nader f\u00f6r att bubblet inte ska bli f\u00f6r v\u00e5ldsamt i glaset. Cava Reserva lagras minst i 15 m\u00e5nader, vilket ger en br\u00f6digare arom och mjukare munk\u00e4nsla. Cava Gran Reserva m\u00e5ste lagras i minst i 20 m\u00e5nader, dessa \u00e4r extremt komplexa viner, men stora skillnader i kvalitet finns mellan producenterna. Dessa \u00e4r minimikraven, en del toppegendomar lagrar sin Cava betydligt l\u00e4ngre, tv\u00e5 exempel p\u00e5 detta \u00e4r Gramona och Recaredo.<\/p>\n<p>Sockerhalt: Brut natural eller brut nature 0-3 gram socker per liter. Dessa tillverkas utan `licor de expedici\u00f3n\u00b4 och d\u00e4rf\u00f6r de torraste cavorna p\u00e5 marknaden. Extra brut: Mindre \u00e4n 6 gram socker per liter. Brut: 0-15 gram socker per liter.
