Sj\u00e4lvklart kommer den fr\u00e5n havet och \u00e4r perfekt som f\u00f6rr\u00e4tt, en tapas som en del av en st\u00f6rre m\u00e5ltid eller bara som tilltugg till en kall dryck p\u00e5 stranden.<\/p>\n<p>L\u00e4get l\u00e4ngs med medelhavskusten inneb\u00e4r att M\u00e1laga och andra st\u00e4der p\u00e5 Solkusten har makal\u00f6sa skaldjur och fiskr\u00e4tter att erbjuda. Oavsett om man gillar sin fisk grillad eller friterad. Om man f\u00f6redrar bl\u00e4ckfisk eller musslor. R\u00e4kor eller krabbor. Eller om man helt enkelt \u00e4lskar all mat fr\u00e5n havet s\u00e5 kommer du hitta det h\u00e4r.<\/p>\n<p>M\u00e1lagas stora kulinariska stolthet \u00e4r dock dess sm\u00e5fiskar. De har olika namn beroende p\u00e5 hur stora de hunnit bli eller hur de serveras. Ibland kallas de <em>boquerones <\/em>och ibland s\u00e4ger man <em>sardinas <\/em>eller i vissa fall <em>anchoas<\/em>. De fiskas h\u00e4r p\u00e5 solkusten och \u00e4r popul\u00e4ra i hela landet d\u00e4r de serveras p\u00e5 alla s\u00e4tt man kan t\u00e4nka sig att tillaga en fisk. De \u00e4r lika goda friterade eller inlagda.<\/p>\n<p>H\u00e4r nere \u00e4r det dock spetten med en handfull grillade sardiner som \u00e4r det mest typiska. Traditionellt i en upp och nedv\u00e4nd b\u00e5t som agerar grill och brinner fr\u00e5n tidig eftermiddag till sen kv\u00e4ll. Grillm\u00e4starna ser till att vinden bl\u00e5ser fr\u00e5n sardinerna mot elden som brinner p\u00e5 ved fr\u00e5n olivtr\u00e4d. De tillagas hela och serveras p\u00e5 samma s\u00e4tt. Ofta f\u00e5r man \u00e4ta det grillade k\u00f6ttet fr\u00e5n fiskens ryggrad men \u00e4r de tillr\u00e4ckligt sm\u00e5 kan du utan problem knapra i dig hela fisken. Den enda kryddan som anv\u00e4nds \u00e4r salt och eventuellt lite citronjuice.<\/p>\n<p>De upp och nedv\u00e4nda b\u00e5tarna som anv\u00e4nds f\u00f6r att grilla \u00e4r inte bara till f\u00f6r estetiken. De \u00e4r praktiska d\u00e5 de enkelt kan vridas till det b\u00e4sta l\u00e4get beroende p\u00e5 vinden.
