Lokalen \u00e4r inte stor, men h\u00e4r produceras en av Spaniens b\u00e4sta \u201dbean-to-bar-choklad\u201d av h\u00f6gsta kvalitet. Det kan beskrivas som en liten hantverkstad i Benajarafe p\u00e5 \u00f6stra Costa del Sol. Produktion sker f\u00f6r hand, f\u00f6r att f\u00e5 fram kakaob\u00f6nans b\u00e4sta karakt\u00e4r och egenskaper med hj\u00e4lp av exakt v\u00e4rme vid rostningen.<\/p>\n<p>Med \u201dbean-to-bar\u201d menas hantverksm\u00e4ssig tillverkad choklad, producerad fr\u00e5n kakaob\u00f6na till choklad. Kakaob\u00f6norna kommer fr\u00e5n plantag som satsar p\u00e5 h\u00e5llbarhet, respekterar de anst\u00e4llda och tar h\u00e4nsyn till milj\u00f6n. Maychoco \u00e4r engagerade i m\u00e4nniskor och natur.<\/p>\n<p>Kakaob\u00f6norna rostas i en specialrost f\u00f6r b\u00e4sta smak. Det \u00e4r producenter som g\u00f6r allt f\u00f6r hand med b\u00e4sta r\u00e5varor som blir till choklad av b\u00e4sta kvalitet och arom.<\/p>\n<h2><strong>Prisbel\u00f6nt choklad<\/strong><\/h2>\n<p>Nyligen blev tv\u00e5 av hennes chokladsorter prisbel\u00f6nta vid den internationella t\u00e4vlingen International Chocolate Awards. Mayte S\u00e1nchez vann tv\u00e5 silvermedaljer och tv\u00e5 specialpriser i kategorin b\u00e4sta lokala r\u00e5varor.<\/p>\n<p>Det var torkad mango fr\u00e5n Axarqu\u00eda t\u00e4ckt med mj\u00f6lkchoklad och mango t\u00e4ckt med vit choklad. De flesta av oss har s\u00e4kert n\u00e5gon g\u00e5ng stoppat ner en flaska Quitapenas M\u00e1laga Pedro Xim\u00e9nez i varukorgen.<\/p>\n<p>Det \u00e4r doft av kola, russin och torkade fikon. Under temat \u201dMomentos\u201d, \u00d6gonblick, \u00e4r det rundtur p\u00e5 anl\u00e4ggningen innan det blir provning av tre viner tillsammans med ost och queso curado.<\/p>\n<p>\u201dTapeo en la Bodega\u201d \u00e4r en vinprovning tillsammans med typiska andalusiska matr\u00e4tter.<\/p>\n<p>Vinprovningen \u201dCopa en mano\u201d som g\u00f6rs d\u00e4r faten lagras ing\u00e5r fyra viner direkt fr\u00e5n faten. Viner som \u00e4r mer \u00e4n 30 \u00e5r gamla.<\/p>\n<h2><strong>Sommelier<\/strong><\/h2>\n<p>Vid provningen vin &amp; choklad som Bodegas Quitapenas och Maychoco arrangerade hade Manu Balanzino bjudits in. Det \u00e4r l\u00e4tt att komma intill och bra med parkeringsplatser.<\/p>\n<p>Vi provade fyra premiumviner fr\u00e5n Quitapenas och fyra olika \u201dbean-to-bar\u201d hantverksm\u00e4ssig tillverkad choklad fr\u00e5n Maychoco.<\/p>\n<h2><strong>Finca Ernite<\/strong><\/h2>\n<p>Det f\u00f6rsta vinet var Finca Ernite (12,75 euro) p\u00e5 Tempranillo fr\u00e5n Ronda. K\u00f6rsb\u00e4rsf\u00e4rg och violetta kanter. H\u00e4r \u00e4r det mogen m\u00f6rk frukt, toner av kryddor, rostade fat, fikon, mjuka tanniner med en l\u00e5ng och mycket behagligt avslut.<\/p>\n<p>Tillsammans med 70-procentig choklad smaksatt med mango sk\u00f6rdad i september\/oktober i Axarqu\u00eda, med choklad gjord p\u00e5 kakaob\u00f6nor fr\u00e5n Peru.<\/p>\n<h2><strong>Tach\u00edn<\/strong><\/h2>\n<p>Det andra vinet var Tach\u00edn (11,95 euro) p\u00e5 70 procent Moscatel Morisco (Moscatel de grano) och 30 procent Moscatel de Alejandr\u00eda som ger viner med mycket druvaromatisk karakt\u00e4r. Doft av en parfymbutik och blomster\u00e4ng. Fruktigt och blommiga aromer och nyanser av persika, fl\u00e4der samt citrus. Tropiska vibrationer och en bra syra som g\u00f6r den mindre s\u00f6t.<\/p>\n<p>Med vit choklad med mango och flor de sal, havssalt fr\u00e5n C\u00e1diz.<\/p>\n<h2><strong>Pajarete<\/strong><\/h2>\n<p>Tredje vinet var en riktig klassiker, Pajarete (11,50 euro), p\u00e5 90 procent Pedro Xim\u00e9nez och 10 procent Moscatel de Alejandr\u00eda. Med ett utseende som b\u00e4rnsten, doft av n\u00f6tter med inslag av russin, fikon och karamel. Apelsinskal, citrus, \u00e4dla tr\u00e4slag. Aromatiska \u00f6rter, apelsinskal, johannesbr\u00f6d, eukalyptus och kryddor. Smakrik, s\u00f6t med viss\u00a0bitterhet som tillh\u00f6r Vermouth. Bra balans mellan syra, s\u00f6tma och beska.<\/p>\n<p>Med choklad med 75 procentig kakao fr\u00e5n Dominikanska Republiken med olivolja virgen extra fr\u00e5n Finca de la Torre tillsammans med apelsin.<\/p>\n<p>Artisten Artemio fr\u00e5n Estland spelade och underh\u00f6ll med sk\u00f6n spansk gitarrmusik i bakgrunden. N\u00e4r fenicierna kom till kusten fr\u00e5n v\u00e5ra dagars Libanon hade de med vinstockar som de planterade. Med egen ursprungsbeteckning redan 1932 vilket g\u00f6r omr\u00e5det till ett av de \u00e4ldste i Spanien med beteckningen DO (Denominaci\u00f3n de Origen).<\/p>\n<p>En g\u00e5ng i tiden var M\u00e1laga ett stort och vida exporterat s\u00f6tt vin. \u00c4ven under den 700 \u00e5r l\u00e5nga moriska perioden var vinet popul\u00e4rt \u00e4ven om det ocks\u00e5 bidrog till n\u00e5gra m\u00f6rka \u00e5r innan exporten \u00e5terigen tog fart efter att de kristna besegrat morerna i Granada 1492.<\/p>\n<p>\u00c5r 1.047 drack den moriske h\u00e4rskaren Idriss II det som de kallade \u201dM\u00e1lagasirap\u201d f\u00f6r att g\u00e5 runt Koranens lagar.<\/p>\n<p>Bodegas Quitapenas startade 1880. \u00c4ven om vinproduktionen inleddes 1670 var det 1825 som produktionen kom ig\u00e5ng p\u00e5 allvar efter att Ram\u00f3n Su\u00e1rez och hustrun Mar\u00eda Aguilar f\u00e5tt \u00e4rva ett par ving\u00e5rdar i C\u00fatar i Axarqu\u00eda \u00f6ster om M\u00e1laga.<\/p>\n<p>1878 drabbades vinodlingarna i M\u00e1lagaprovinsen h\u00e5rt av vinlusen Phylloxera som ing\u00e5r i familjen dv\u00e4rgbladl\u00f6ss.
