En doft med nyanser av \u00f6rter, \u00e4pple och gr\u00f6na bananer, kron\u00e4rtskocka och tomat. Smaken bjuder p\u00e5 en viss s\u00f6tma men \u00e4ven beskhet och kryddigt avslut. En smakupplevelse helt enkelt.<\/p>\n<p>Ett test eller en provning av olivolja p\u00e5minner mycket om vinprovning. Vi betraktar, doftar och smakar. Precis som vin d\u00e4r olika druvor kan anv\u00e4ndas s\u00e5 finns det ett stort utbud av oliver. Cirka 900 varav ett 50-tal anv\u00e4nds som bordsoliver eller g\u00e5r till produktion av olja. De har namn som exempelvis Picual, Manzanilla de Ja\u00e9n, Verdala och Real.<\/p>\n<p>Olivoljan serveras i sm\u00e5 runda beh\u00e5llare som ligger r\u00e4tt i en kupad handflata. Kroppsv\u00e4rmen v\u00e4rmer oljan som sl\u00e4pper ifr\u00e5n sig dofterna. Jag drar in luft och l\u00e5ter olivoljan t\u00e4cka hela tungan.<\/p>\n<p>Nu h\u00e4nder det saker och du upplever olivoljans krydda eller den peppriga smaken.<\/p>\n<p>Att anv\u00e4nda en bit br\u00f6d kan rekommenderas. Olja av h\u00f6gsta kvalitet \u00e4r den kallpressade fr\u00e5n f\u00f6rsta pressningen. Vi s\u00e4ger ocks\u00e5 Extra Virgin och Extra jungfru och utan n\u00e5gra kemiska tillsatser.<\/p>\n<p>D\u00e4refter g\u00f6rs ytterligare en pressning, en s\u00e5 kallad varmpressning. Till en s\u00e5dan kan tillsatser anv\u00e4ndas.
